🍋 Lemon Blueberry Tart (Step-by-Step Visual Recipe)

🛒 Ingredients

  • Tart crust

    • 1 ½ cups flour

    • ½ cup butter (cold, cubed)

    • ¼ cup sugar

    • 1 egg yolk

    • 2–3 tbsp cold water

  • Lemon filling

    • 1 cup fresh lemon juice

    • Zest of 2 lemons

    • ¾ cup sugar

    • 4 eggs

    • ½ cup heavy cream

  • Topping

    • 1–2 cups fresh blueberries

    • Powdered sugar (optional)



👩‍🍳 Step 1: Make the Tart Crust

  • Mix flour + sugar

  • Cut in butter until crumbly

  • Add egg yolk + water

  • Press into tart pan

  • Chill (20–30 min), then blind bake at 350°F (175°C) for ~15 min


🍋 Step 2: Prepare Lemon Filling

  • Whisk lemon juice, zest, sugar, eggs

  • Stir in cream

  • Pour into pre-baked crust


🔥 Step 3: Bake the Tart


  • Bake at 325°F (160°C) for 20–25 min

  • Center should be slightly jiggly

  • Let cool completely


🫐 Step 4: Add Blueberries & Serve

  • Top with fresh blueberries

  • Dust with powdered sugar (optional)

  • Slice & enjoy!

  • Chill before serving for clean slices

  • Add a light glaze (warm apricot jam) for shine
